Carenero Superior

Is a regional type of cacao that grows east of Caracas. Since the colonial period, the Carenero has been renowned for its complex flavour notes of fruit, flower , nut, spice and intense chocolate taste.

 

"The first thing I think about the cocoa of these beans are the smells and flavors of dried fruit, such as raisins, so surprisingly, this cocoa is not as bitter as we are used to, but rather more towards the fruity notes."

The Icoa white chocolate made with this bean does not have these fruit notes, but is unique because of its amount of pure cocoa butter from only this bean. Because the butter is not processed before it is made from chocolate, this chocolate is unique and above all pure! At the international chocolate awards, the Icoa white chocolate was therefore voted the best white chocolate in the world for the 5th time in 2016.

 

The name "Icoa" is derived from an Indian goddess, who is worshiped by the native Indians for her beauty, purity and the belief that she would possess a white soul.

 

Rio Caribe

Rio Caribe is a Trinitario type bean, long a stalwart of Venezuela’s cacao production. It is a large, plump bean with high aroma and fruity-acid flavors and subtle earthy tones. Indeed, an ideal cross between the delicate criollo types of Western Venezuela and the robust Forasteros of the Amazon basin.

 

"This chocolate is just a little more towards the yellow fruits in terms of taste. Think of citrus fruits, which makes this chocolate a little more towards the French style of chocolate."

Sur del Lago

Sur del Lago

Region: North-Western Venezuela 

 100% Criollo Bean 

 hints of coffee and tobacco

This cacao is grown at the end of the Andes Mountain range. This area is the birth place of the cacao Criollo. The beans from which this chocolate is made belong to the Criollo type. This type of bean belongs to the very exclusive indigenous species of Venezuela. The Criollo beans produce only 0.5% of the global production of cocoa.

 

The Sur de del Lago has a unique and, compared to standard chocolate, a very unique flavor that leans towards coffee and tobacco.

San Joaquin

San Joaquin

 Region: North-Western Venezuela 

 100% Criollo Bean 

 hints of walnut and dried fruit

To craft this chocolate, we utilize a descendant of the great Ocumare type Cacao, originally from the north-central region of Venezuela. We take great care with each step of the harvest, select the finest beans and each phase of the industrial process is supervised in great detail.

 

The San Joaquin has a soft round taste that is reminiscent of walnuts and dried fruit.
